Easy Peasy Rolls

These rolls are super easy and quick to make. You don't have to slave and wait and wait and wait for rising dough! They only take about 35 minutes from start to when you are eating them!!! I found this recipe on Instructables and made them for Thanksgiving bc I wanted to be fancy making my own rolls, but then continued to make them bc they are soooo easy!!  They are Yummy rolls and there are only 7 ingredients!!




Ingredients:
  • 1 3/4 Cups warm water
  • 1/2 oil
  • 1/4 granulated sugar
  • 3tbsp dry active yeast
  • 2 eggs
  • 1 tsp salt
  • 5 1/2-6 cups flour (start off w/ 5 1/2 and add if too sticky)
Directions:
after 15mins
1- In a bowl, mix the first 4 ingredients and let sit for 15minutes





2-After the 15 minutes, pour into a mixer and add the remaining 3 ingredients. Takes about 2 minutes in a mixer with dough hook.


3-Then make some ping pong ball sized dough balls and place them about 2 inches apart on a ungreased cookie sheet. Let rise 10 minutes.


4- Then cook for 10 minutes or until golden brown on 400*

That's it! Easy Peasy Rolls! It makes about 40 of them and are great side for dinner as well as the kids lunches-they love their 'lil mini sandwiches! Happy Doughing!!

****Update****12/27/12
Turn the dough into a loaf to make sliced or garlic bread. All you have to do is form a loaf instead of rolls, let rise and make slits on top. Cook for about 35-45 minutes or until light brown.



We love it with sandwiches~hot or cold

Best Brown Rice Recipe

I have tried quite a few brown rice recipe, but once I made this one there was no turning back! It really is the best brown rice ever! I make a double batch at the beginning of each week and freeze half of it in a few different labeled baggies and use the rest for dinners or lunches during the week. I also make a big batch of beans (recipe soon to follow) at the same time to always have the ingredients for ready to eat burritos!




Ingredients:
this makes about 2-3 large servings. I always double it**

-1 tbsp butter
-1 C brown rice  (**I really like Ca brown Basmati-its a aromatic
                                  long grain rice)
-1 egg
-2 C veggie broth (you can use chxn broth)
-1tbsp olive oil

*Preheat oven to 350 degrees F

Saute brown rice with the egg in the butter. You have to constantly stir it over medium heat until the rice is dry. Usually take about 5 minutes.






Then you add your broth and olive oil and pour the mixture into a deep baking dish. 








Bake for 30 minutes and then cover with tin foil and bake for another 30 minutes. Check it at the hour mark and if the liquid isn't absorbed, cook it longer and ck every 5 minutes. 
Make sure you don't mess with it while its cooking. You will be tempted to want to stir it, BUT DON'T!!



Best Brown Rice makes a great side or addition to any burrito. I love to eat mine mixed with fresh salsa, avocado, lettuce, black beans and a touch of sour cream and cheese ;) . Give it a try and let me know how you like it. My family LOVES it!
