Easy Linguine w/ Coconut Butter

You know when you have one of those nights as a mom when you didn't really plan dinner? Well, I had one of those nights recently and got creative and ended up with a tasty dish. When everyone in the family eats it, then I know it was a success! (or they were starving ;) lol.



Ingredients:
  • Linguine noodles
  • 3 small tomatoes-cut into desired size
  • 1 1/2 C frozen broccoli
  • 1 1/2 tbs coconut butter
  • 1 tsp garlic powder
  • 1 tsp Italian season
  • 1/4 C feta cheese-sun dried tomato w basil flavored (or less,but its our favorite)
  • few shakes Parmesan
  • dash of pepper/salt


Directions:
  1. Cook broccoli in 1 1/2 C water in medium saucepan until desired tenderrness
  2. Boil noodles ~3-5 minutes (mine where Open  Natures precooked ones get in cheese section)/drain
  3. Melt coconut butter w/ garlic and Italian seasoning to in skillet on Low
  4. Add drained broccoli  and noodles and tomatoes  into seasoned butter-toss and blend
  5. Add salt/pepper to taste and then cheeses.
  6. Serve :)
Simple, with only a few ingredients. I really think it was the coconut butter that made it sooo yummy. I think it would have been really good with fresh minced garlic cooked in the butter first ;) If you want it less calories, omit the cheese, personally that's my favorite part, but do whats right for you!
